Our company, situated in the greenest region of Italy, is very conscious of ecological problems, and endeavours to use only processing methods which respect, to the utmost the environment.
To better understand how physical refining is more ecological, we show below the phases involved in this process.
The main phases of physical refining are the following:
1) Crude lamp olive oil purifying by the addition to the oil of a precise quantity of hot water at 90° C. The blend is then precipitated in a centrifuge.
2) Centrifugation, by Westfalia centrifugal separator, to obtain clean oil (100% fatty matter). In fact, the centrifuges, to the speed of 16,000 revolutions per minute, separate perfectly 100% fatty matter from the water retaining impurities.
3) Unlike in chemical refining, in physical refining neutralization and deodorization occur at the same time.
Washed oil enters in a device in stainless steel AISI 316, that is under vacuum of 0,1 mm of residual pressure (since to obtain an excellent product we need to reproduce inside the tank conditions as much as possible similar to those ones we can find on the moon). A temperature of 230/240° C, with contemporaneous insufflations of direct steam, will allow to the product to get the following characteristics:
Peroxides 0,
Acidity 0.
The acidity which the initial oil was composed of is split for an atmospheric pressure drop and separated from the final product called "refined olive oil", that will result odourless, colourless, tasteless and highly digestible.
Acidity, in turn, will become and concentrate in distillate fatty acid.
As we have detected, the direct steam causes a repeated and accurate washing of the oil, eliminating unpleasant tastes and odours.
In conclusion, physical refining differs from the chemical one, simply because it does not use any chemical product, but only bleaching earths and coal, which are not considered chemical, but diatom and/or vegetal products.
Also during every step of refining the product, it is analysed by a high-qualified staff of technicians, with the aid of the most modern instruments available in this field, to guarantee the quality and genuineness of our oils.
