It is supposed that the Etruscans were the first to start the cultivation of the olive tree, which developed largely during the Roman Empire, when many patricians chose the Umbrian lands as their country villas. Nutritional Value

Oleic Acid

Oleic acid (omega 9) makes up 55 - 85 percent of the fatty acids in olive oil. Don't confuse this with the amount of free oleic acid which is the main factor used to determine the grade of the olive oil and the lower the better.
